We are a guide for visitors to and residents of the Texas panhandle of where to go for the dining experience they expect, not a guide of where NOT to go.  If we have a bad experience (and we have had several), we simply do not review that restaurant.

Having been a restaurant owner in the past and hearing and reading lots of stories about inspections, I know that the Amarillo bi city county health inspections are as thorough and strict as one could imagine.  Like us, they come unannounced on an irregular schedule.  In our opinion, panhandle restaurants are safer than the average home kitchen.  Also, the actual owner is often on the premisis much or all of the open hours making sure everything is right.  This is especially true of cafes and restaurants that close for a couple of hours or so in the mid afternoon.

We do some and will do more.  Our main focus is on locally owned restaurants where the owner is on the premises a lot of the time being sure everything is right.  There is nothing wrong with going to the latest multi million dollar fad restaurant, but we also like out of the way established dining establishments of which people need to be reminded.
